Zesty Sauerkraut Relish (recipe)

This relish is to Brat what pickle relish is to the Hot-Dog.

1/2 cup sugar
1/2 cup vinegar
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 can (16 oz) sauerkraut, drained
1/3 cup chopped sweet red or green pepper or both
1/3 cup chopped onion
1/3 cup chopped cucumber

In saucepan heat sugar and vinegar until sugar is dissolved; stir
occasionally.
Stir in mustard, garlic powder and pepper.
Cool.
Combine drained sauerkraut, red or green pepper, onion and cucumber; stir
together with vinegar mixture.
Cover and chill the relish until needed.
Makes about thee cups relish.
Serve with Brats.

I really like these recipes!!
I think they will be usefull to even the bachlors we have in here.

Question tho` on the sourqraut...
Do you chop it up like you would the onion or peppers & cucumbers??
Like to make it the same size??
It sounds really good and also, how long will it last in the refridgerator
if you do not use it all at once? How do you store your leftover?
